A HEARTY, LIGHT AND FLUFFY PANCAKE RECIPE

This is my fifth pancake recipe on my blog.  Can you tell I love pancakes?  This recipe was a complete experiment, that I am happy to say turned out fabulous.
I have also been experimenting a little, using Coconut Flour.  I love the hearty, flavor of this flour, however, it can be tricky to work with in terms of the liquid ratio.   Next part to this recipe:  Cottage Cheese.  Not a cottage cheese fan?  Trust me, you will not even know it is there.
Years ago, when I first discovered I was Lactose Intolerant, I assumed I could never eat Cottage Cheese again.  I love cottage cheese served with vegetables or fruit.  It was something I really really missed.  Well, I decided to just go ahead and try it. Just a tablespoon or so for 5 days.  The good news:  no reaction what so ever.  Is this because Cottage Cheese has no Lactose in it?  I do not know.  I have never found any research to suggest that it does or does not contain Lactose.  And in these pancakes?  Deliciously hearty, and fluffy!
I also learned that Coconut is not a nut - it is a seed.  Great for people who have nut allergies.  Truly, I am in love with this new pancake recipe.
3/4 cup 2% Cottage Cheese
3/4 cup milk - I used Soy Milk
2 large eggs
1 Tblsp. Grape seed Oil
1/2 cup Coconut Flour
1/2 cup Tapioca Starch
1 tsp. Baking Powder
2 Tblsp. sugar
Add the cottage cheese to a food processor, and begin to blitz up.  Then add in the milk, while keeping it running.  Add the eggs in one at a time, and the grape seed oil.  Process until completely smooth.
In a medium bowl, mix up the dry ingredients, then add the wet to the dry, whisking well to combine.
Heat up a non-stick pan on medium heat, with a drizzle of Grape Seed oil.  Ladle a good sized amount of pancake batter to the pan.  Once the batter bubbles up nicely, flip and cook the other side.
The next thing I learned?  Do not try to eat two of these babies....I was stuffed!  Can't wait for breakfast tomorrow!

  1. Good for you for trying things out! So, because I am also lactose intolerant, I too will try cottage cheese! I found & lactose free one at my Bio planet store from a German brand.
    These pancakes look like the real stuff! I also love to use coconut flour a lot! 🙂

    1. Wow - Sophie you are so lucky! It sounds like you can get a lot of foods that are lactose free - as far as I know, we can only get 2% Lactose Free Milk here. If you try the cottage cheese - go really slow at first, cause you never know?? Good luck, let me know how it works for you. 🙂

  2. Those are gorgeous pancakes, Ina! I'd go for two of them as well and then also regret it. 😉 I've never been a fan of cottage cheese, so it's good to know that you can't tell it's there. I do love using coconut flour. Interesting on no lactose reaction, too. Thanks for sharing all, dear! 🙂

  3. FYI- Cottage Cheese does contain Lactose, too high in arbs and isn't recommended on GAPS diet for that reason. Also, many brands do contain GLUTEN and aren't required to be labeled.
    The government under pressure from big business, doesn't require ingredients that make up less than 2% of of the total to be labeled on foods, cosmetics, health care or personal care items. They aren't required to label GMO ingredients AND recently the USDA ruled that these corporations can SELF REGULATE. Talk about the fox guarding the hen house!

    1. Thanks Christine - this is good to know! I don't know why I have not had a reaction to the lactose? Maybe, it is similar to butter, in that there is not a lot of lactose in it? Again, thanks for the information!

  4. I know certain daily products contain less lactose then others, considering the lactose is a milk sugar. Personally I can handle hard cheeses better then milk or ice cream. Good Luck! I would love to try these, I hear good things of coconut flour also.

    1. Thanks Alexandra! I too can have aged cheeses - but no soft cheeses or milk or cream - unless it is SCD cream where all the Lactose is removed.
      While on this topic - has anyone ever heard of Lactose Free Cream Cheese? I thought I heard a while ago that Philadelphia brand was making one???

    1. Hi Ellen - I think Silken Tofu might just work, because it would probably reach the same consistency when put in the food processor. If you try it let me know if it works, because that would be a great alternative!

    1. Thanks Janet - if you are lactose intolerant, it is best to try small amounts first to see how your body responds. Not everyone will be able to tolerate cottage cheese - I feel lucky that I can.

  5. Oh how I used to LOVE cottage cheese!! While pregnant it was possibly the tastiest thing on earth... sadly my body no longer tolerates it 🙁 But I do remember vividly the feeling when I discovered I could eat feta and yoghurt again! I feel your joy xx
