Sometimes there are mornings when you wake up STARVING, plus there were some odds and ends in the cupboards and fridge that needed using up – and keeping corn tortillas or Brown Rice Tortillas in the freezer makes this breakfast a snap!
I also had run out of salsa, did not have red onion or a jalapeno pepper on hand – so I just diced up a tomato, a handful of cilantro, 2 green onions, juice of ½ a lime, some fresh cracked pepper – a sort of, kind of salsa – which tasted good and refreshing!
For this breakfast Tortilla:
Scramble an egg, heat up a can of refried beans, chop up some lettuce, heat up a brown rice or corn tortilla, add grated cheddar cheese – assemble with egg, and beans, salsa and lettuce and you have one hardy filling breakfast! Although, now it is clearly time to go grocery shopping and re-stock!
This tasted good cold too - would also make a great lunch!

Karen...it was yummy...so much you can do with corn or rice tortillas....the sky is the limit!
