With our hot weather, it sure has been nice using a BBQ instead of heating up the house!  I have been making this Marinade for Years...it never dissapoints!   This is a simple marinade, that is good on all meats, and great for salmon too.  Some Terriaki marinades burn easily, but this one does not, and it is versatile: you could add some honey, green onions, Dijon mustard etc. but usually I like to keep it fairly simple.

Depending on how much meat you have to marinade, just increase amounts.

3 Tblsp. Gluten Free Soy Sauce
2-3 roughly chopped garlic cloves
juice of 1/2 a lime
2-3 Tblsp. water
a couple of splashes of hot sauce
1-2 Tblsp. Toasted Sesame Oil (or any oil will work, but we found the toasted sesame oil really gave more of a smoky flavor to the BBQ chicken).

I usually just toss everything into a zip lock bag, place in the meat, and refrigerate.  This is great if left to marinate all day, but this was just marinated for 3-4 hours - still really tasty.   I usually turn over the bag, massaging the marinade into the meat 2 or 3 times over the few hours. We cooked these on a Medium to High Heat - turning about every 3 minutes.  I always use a meat thermometer - as long as you are in the 175 Plus range the meat is done.   Whether on the BBQ or done in the oven - sooo yummy.
