Here is one more lunch salad we have had in doing the low carb, less grain meals. So far, we have had A Refreshing Tuna Salad, A Delightful Salmon Salad, Chicken Curry Salad, Shrimp Asparagus Salad.
They were all yummy, and we have really been enjoying these lunches, which are all quick and easy to whip up too. Here is the thing....I am running out of ideas! Anybody out there have some great salad with meat or seafood recipes they want to share? Or any other low carb low no grain lunch dish recipes they want to share?
This salad is enough for three - but could easily be increased.
4 shredded Romaine Leaves
1 cup of diced Naturally Smoked Ham
a generous 1/2 cup of defrosted frozen peas
a generous 1/2 cup of diced carrots, lightly steamed, but still with some crunch
2 finely sliced green onions
1 finely sliced celery stalk
2 Tblsp. minced Fresh Flat Leaf Italian Parsley
Parmesan Cheese
I used my Dijon Mustard dressing, you can find here. I did cut the amount in half for this amount of salad.
Toss all of the vegetables and ham in a bowl. In a small bowl whisk up the dressing pouring over the salad, lightly mix to evenly coat. Add a generous amount of Parmesan cheese, toss and serve.
