This was the first meal to be cooked in our new Air Fryer, and I must say I was impressed. This post is more about the method of cooking a roast and potatoes in a new way.
I made a simple dry rub for the pork tenderloin...First I used about a tsp. of Extra Virgin Olive Oil to rub over the roast. Then the dry rub was: 1 tsp. each: garlic powder, rosemary, Greek oregano, paprika, and then season the roast with salt and pepper.
Because I wanted to bake potatoes at the same time again the method was a bit different. We used 4 German Butter potatoes well scrubbed, again using a small amount of EVOO rubbed all over the potatoes, then pierce a few times with a fork.
Preheat the Air Fryer for 5 minutes at 400 degrees. Then place the potatoes into the basket to cook for 20 minutes. At the 20 minute mark, open the basket and turn the potatoes over, place the roast into the middle of the basket and continue to cook for 17- 18 more minutes, turning the roast half way through the cooking time. The total cook time was about 38 minutes....great huh?
Remove the roast and potatoes to a plate, and let the roast rest for 5 minutes then serve along side any other side dishes.
