CHICKEN WITH BEETS AND CABBAGE - A RECIPE REIVEW

This delectable dinner was served with many thanks to Katie, from Thyme for Cooking.  If you love beets, chicken, red wine and balsamic vinegar...this is a meal for you.
The only changes I made to Katie's recipe was to use fresh beets, which I cooked, fresh sage and I doubled the recipe in terms of the amount of chicken I cooked.
Initially, I will admit to being a bit skeptical in regards to the ingredients.  Then I thought about it.  I love all of the ingredients in this recipe so I knew it would so so work.  And yes it did!
The gravy turned out mouth watering delicious.  And yes it is red.  My DH loved it too even though he wondered about "red gravy".  He had two huge helpings. I also sent this recipe to my daughter who happens to be a huge lover of beets.  Thank you Katie...this recipe is definitely a keeper!
