Tracee, at Mrs. Ed’s Research and Recipes invited me to join the GF Web Carnival….creating desserts made with Gelatine.  Although, I have not used gelatine in years, I do remember a desert from child hood – loaded with that frozen petro chemical whip cream that we all loved as kids.  Remember that stuff? Yikes!

So, I thought, it would be lovely with SCD Whip Cream, but we had eaten it all for a previous desert…however, I did have Organic whole yogurt on hand, and I must say, it turned out delicious!  I also took some tips from Joy of Baking, thank you very kindly.  And thanks for the invite Tracee! 

Here is what we created:
½ cup cold water
2 packs of unflavored gelatine (2 Tblsps)
2 ½ cups Juice – I used Oasis Healthbreak Berry and Pomegranate Juice (made from juice with no sugar) Plus extra juice for the frozen fruit.
1 ¾ cups Whole organic yogurt
5 big Tblsp. Honey
1 tsp. Vanilla
8 large frozen strawberries
1 handfull Frozen blueberries

Pour ½ a cup of cold water into a bowl, and sprinkle in the gelatin.  Let sit 10 minutes.
Meanwhile, heat 1 cup of the juice, till hot, not boiling.  Then after the gelatin has sat for 10 minutes, add to the hot juice, stirring well to dissolve.  Remove from heat and add in the remaining juice.

To the yogurt add the Vanilla, and Honey, whisking well to incorporate. Remove ¼ cup , and set aside to drizzle on top later.  Puree the frozen fruit in a food processor or blender, adding in just enough extra juice to create a frozen thick slushy consistency.  Add this to the gelatin juice mixture mixing to incorporate,.  Now add in the remainder of the yogurt stirring well to combine, pour into a nice bowl, or glasses, refrigerate until set.

When set, add a drizzle of the extra yogurt on top of each glass.  I made mine and had it in the fridge by 10:30 6:00 p.m. it was a nice set consistency....fresh, juicy, flavorful!  Enjoy!
