Don't you just love fruit crumbles? The warm cinnamon spice flavor and the sweet and tart fruit always reminds me of a comfort dessert. So versatile too. Add in homemade granola, and it does not get any better. Plus, your kitchen will smell divine. Peeking into the freezer I found last summers frozen blueberries as well as some frozen black plums - yeahhh!
Any fruit would work nicely here - this is a recipe I want to use this summer with fresh peaches and blackberries - yum.
4 large organic Gala apples
2 large Red pears
handful of frozen Blueberries
3 frozen chopped Black Plums
2 cups of Gluten free granola - I used this one
1 cup crushed Gluten free cornflakes (I just lightly crush with my hands)
1/2 cup butter
1/2 cup brown sugar
(extra brown sugar and butter to sprinkle on top)
1 1/2 tsp. cinnamon
1 tsp. ground ginger
juice and zest of one lemon
To a large bowl, add the peeled, cored and chopped apples and pears and chopped plums. Sprinkle in the lemon zest, and the juice, stirring to combine.
In another bowl, combine crushed corn flakes the 1/2 cup of butter and brown sugar, cinnamon and ginger mixing well with a fork.
Preheat the oven to 350 degrees, and lightly grease a casserole dish with butter.
Mix in the butter sugar mixture with the apple, pear, plum mixture, then add in half of the granola - mixing to incorporate.
Transfer to a buttered casserole dish, add in the frozen blueberries then top with the rest of the granola, a few dabs of butter, and a light sprinkling of brown sugar.
Bake for 45 minutes, serve warm with whipped cream.
