This lovely, delicious Huevos Rancheros is becoming a once-a-year tradition. So delicious - and even better - it was cooked for me! Every year, my best friend, Sophia, makes this yummy meal for me. While living in the heart of Texas she earned the nickname, "Tequila Sophia", where she fell in love with Tex-Mex food. Out of the blue, she will call and say "can I come out and cook you Huevos"? Ohh yeahhh! She buys all the food, carefully reading labels to make sure everything is gluten free. When she arrives, she takes over the kitchen. Isn't she such a love?
I sit back, watch and then it is on the table. Yummmm! Sophia starts with the salsa. She buys a really good quality natural Salsa, to which she adds extra chopped tomatoes, cilantro, red and green onions. Next, she wraps the corn tortillas in foil, to warm in the oven. Then she cooks up a dozen gluten free sausages. Once cooked, she slices them thin, and sets aside. Then the gluten free hash browns go into the oven. Followed by scrambling the eggs. Once scrambled, she adds the sausages back to the pan of scrambled eggs, with chopped red onion, and chopped cilantro.
Served with guacamole, salsa, grated cheese, and hash browns....we were in heaven. When my son still lived at home, he once got to share in this lovely meal. To this day, he still talks about Sophia's Huevos. We love you Sophia....can you come back again tomorrow?
