BACON AND CHEESE MEATLOAF
This is a delicious recipe I first saw on the Paula Dean show - Her recipe is called Bacon Cheeseburger Meatloaf. You can check her original recipe via the Food Network . The changes I made was to use ground turkey, and ground pork, as well as using less bacon than the original recipe, gluten free bread crumbs, and some fresh parsley. I also eliminated the Worcestershire sauce called for in the original recipe … as it contains Malt Vinegar which is made from Barley - I used balsamic vinegar instead. ** This is wonderful on sandwiches the next day too!
1 lb. ground turkey
½ - ¾ lb. ground pork
3-4 strips of bacon chopped and cooked crisp
8 oz. sharp cheddar cheese
1 large egg
¾ cup diced onion
¼ cup gluten free bread crumbs
Salt and pepper
In a separate bowl combine:
1 Tblsp. balsamic vinegar
¼ cup mayonnaise
1/3 cup ketchup
1 – 2 Tblsp. Dijon mustard - Mix Well
Combine the first 8 ingredients together adding in some of the sauce -about 2 Tblsps. Save the remainder for the top of the Meatloaf. Mix well, and shape into a loaf pan - pour remainder of sauce over the meatloaf spreading with a spoon to cover.
Bake 350 1 - 1 ½ hrs. or until cooked through. This will make you happy!
** Note: Scott Adams of Celiac.Com writes a really good article on various vinegars etc. that are safe/and not safe for Celiacs.
The best thing about meatloaf is meatloaf sandwiches.... usually.... But this looks really good right out of the oven!
