Ohhh how I love local, organic strawberries. In previous years, I have always made Strawberry Freezer Jam. Why Freezer Jam? I like the taste better, it is fresher, more red in color, and if you use a low sugar Pectin or "light" version, less sugar, no cooking equals: more flavor.
My Ever Bearing Strawberry Plants are coming along, although, do not have flowers on them yet. Might not see strawberries this year? Not sure, because I have never grown them before:
We have had a late spring this year, so everything is behind...promises for July and August? I hope so.
I had made Freezer Jam last summer....believe it or not it keeps well for up to 2 years...so we have discovered. With this new batch, we will eat fresh, have for breakfast on pancakes, strawberry shortcake, fresh berry smoothies, and then the rest I will freeze. There is nothing better than in the middle of winter, pulling out frozen/fresh organic strawberries.
Also, strawberry pie, in the works. I have never made a strawberry pie before...this should be interesting, and I hope TASTY! How do you use fresh strawberries?
Strawberry pie is divine! I like strawberries in almost every manner except cooked in quick breads and muffins. Strawberries lightly dusted with cardamom sugar may be one of my favorite summertime treats. I've never tried freezer jam before, now I'll have to because yours looks lovely!
Uummmm cardamom sugar sounds so good! And I'm with you, I like them in everything except cooked in breads and muffins too, I think the true essence of a strawberry gets lost that way. I'll have to try them with cardamom sugar, thanks for the tip! Ina
