Wow…sometimes I am still amazed at all of the gluten free food available these days. Especially compared to back in the day when there was nothing. It just dawned on me….I have never used a gluten free cake mix before. I have always made everything (well except pasta…., one of these days) from scratch.
My reason for making a cake mix: I wanted to see how good it was, also I had made a big birthday dinner, with homemade Ice Cream – (another post), so having already been in the kitchen all day, I wanted some convenience.
This cake was a pleasant surprise…. incredibly moist, and chocolaty. In this house, if ever there is chocolate cake, I am only Allowed to ice it with Mocha Icing…seriously, if I dared try to use another icing, I would never hear the end of it. And Dang…it was good! Pamela's Chocolate Cake mix is definitely worth a try….especially when you are running out of time or just want the convenience. So glad Celiac's or Wheat Intolerant folks finally have more options. Thank you Pamela’s. You will be in my Pantry more often!
