I have recently come upon a most gorgeous blog - Helen's blog called Tartelette. Have you seen it? Her photography is amazingly beautiful. And her recipes look scrumptious. I was intrigued by her recent post on Peach and Blueberry Galettes. In the recipe, Helen poached her peaches in Jasmine tea. How good does that sound? Well, I am not an experienced pastry chef, and soon realized my Galettes were falling apart, so I decided to create one very rustic pie. Please forgive the photo - this is definitely a rustic pie!
Helen also made up a Lemon Thyme Sugar to add on top of each Galette. I poached my peaches in a lovely Black Current Tea, and used lemon zest for the sugar. Divine. I was amazed at how lovely the tea infused into the peaches. Delicate, but very much there in flavor. And despite the trouble I had rolling this pastry, it was delicious. It seems the only pie crust I have had success with is Bette Hagman's Dream Pastry, so next time I will use her recipe in recreating Galettes. So thank you Helen for the inspiration on such a lovely desert....check out Tartelette, you won't be disappointed.
