PIZZA SAUCE MEATLOAF

I know I have said this before, but I have to say it again...there are two things in this household we love to eat:  Meatloaf and Meatballs.  So we are game to try just about any flavor combination.  This was mighty tasty, and super moist.  Using a homemade pizza sauce will give you the best results.  Whenever I make pizza, I always make extra pizza sauce which I freeze, and this night I decided to add some into the meatloaf - a great combination.
1 1/2 lbs. hormone/antibiotic free lean ground beef
3/4 cup of homemade Pizza Sauce - I used this one
1/2 of an onion, minced
2/3 cup grated feta cheese (or aged cheddar cheese would taste great too)
fresh cracked pepper
1 egg
1/2 cup gluten free bread crumbs
Preheat the oven to 350 degrees.
In a medium sized mixing bowl, combine the ground beef, onion, feta cheese, pepper, egg, bread crumbs, and half of the pizza sauce.  Mix to combine, and transfer to a loaf or baking pan, shaping into a loaf shape.  Pour over the rest of the pizza sauce onto the meatloaf, spreading over evenly.  Bake for about 1 hour 15 minutes, or until cooked through.  Let rest at least 10 minutes before removing to a platter to slice.
