REFRESHING MINT FRUIT SALAD

With all of the fresh beautiful fruit available, and the gorgeous hot weather we are having right now...I knew it was time for a refreshing fruit salad.  Usually we try to eat as seasonally as possible.  But when I saw fresh pineapple and fresh watermelon, organic grapefruit....I could not resist. Any fruit will work, but we used:  fresh pineapple, watermelon, strawberries, blueberries and grapefruit. (the strawberries and blueberries came from a lovely organic farm near by)

Dressing:

Begin by slicing the top and bottom off of the grapefruit.  With a sharp knife, slice the peel off of the grapefruit, removing all of the white pith.  Holding the grapefruit over a bowl, slice into sections, then once all the slices are in the bowl, squeeze out any left over juice from the remains in your hand.  Cut the sliced grapefruit in half. To this add the juice of 1 fresh lime and finely grated zest, 1 Tblsp. Agave Nectar, and 10-12 finely minced mint leaves.  Mix to incorporate.  Just add your desired fruit, mix well to combine.  Refrigerate until ready to serve.

This is also lovely with a drizzle of Vanilla Yogurt Sauce.  I just used plain organic yogurt, about 1 cup, 1/2 tsp. Organic Vanilla, and sweeten with Honey or Agave Nectar to taste, mix well, and drizzle over the fruit, great for breakfast, or even as a refreshing desert.  And this salad even tastes better the next day!

    1. Awww, so glad you can have everything in this recipe. The lime/mint/grapefruit juice gives the salad so much more flavor dimension! Hope you enjoy! Ina
