ROASTED BEETS


ROASTED BEETS
This recipe was sooo delicious….I think it will be the only way I ever cook beets again!
5 medium or large beets
olive oil
1 shallot
salt and pepper
Wash the beets under cold water.  Cut the tops and ends off of the beets.  Then cut them into quarters.  Place in a roasting pan.  Drizzle with olive oil, salt and pepper.  Toss to coat well.  Place in a preheated oven 375 and roast for about 45 min. or until tender.  Half way through roasting, stir or toss the beets to ensure an even roast.
Remove from the oven, and allow to cool.  Once cool, peel off the skins – they can be cut in half or left the same size.
Drizzle some olive oil in a pan and heat low to medium heat.  Slice up the shallot lengthwise and sauté in oil until translucent.  Add the beets and heat through.  Serve immediately, adjust salt and pepper.
Note:  adding a splash of  Balsamic Vinegar to the pan would taste wonderful too!  Or a squeeze of fresh lemon juice.

  1. The only way I can buy beets is pre-cooked and peeled... Not bad, saves the work and red color everwhere. I'll try this - looks delicious!
