ROASTED, HERB CHERRY TOMATOES


Before going into this recipe, just thought I would mention, that Katie at Thyme for Cooking passed on some great info!  The French Meadow Bakery is having a Gluten Free Recipe Contest, you can check out their lovely site  here.  Their  Gluten Free baked goods look amazing!  Although, they are not in Canada, I have emailed them to see if this contest is open for everyone.   The last day to submit your recipe is June 30th, so wanted to let every one know about this fun contest.  Thanks for sharing Katie!
This is such a lovely, delicious, easy dish, a great accompaniment to any roasted meat or fish dishes.
20-30 cherry tomatoes cut in half
1 sprig of fresh rosemary, roughly chopped
2 sprigs of fresh thyme, removed from stem
Olive oil
Salt and Pepper
A few drizzles of Balsamic Vinegar
Place the cherry tomatoes into a roasting pan, adding all of the ingredients, stirring to coat well.

Bake in a  preheated 350 degree oven.  After 30-35 minutes, I shut the oven off for about 15 minutes or so…..the sweetness of these tomatoes was divine!  They would also be lovely with fresh grated Parmesan Cheese, or crumbled Feta Cheese.
