This was heaven....absolute heaven. There were 5 of us for dinner this night, a 2 1/2 lb + Organic Pork Loin Roast...not one bite left. This was the first meal we had using the Rotisserie. We did find with our new Barbecue, that we had to baby-sit it quite a bit, to keep the temperature at a regular 350 degrees, so at that temperature, this took about 2 hours. Next time, I would take it off the rotisserie about 20 minutes sooner, but nevertheless, so tender, so sweet and delicious!
1 large shallot, roughly chopped
2 garlic cloves, roughly chopped
juice of 1 organic lemon
2 Tblsp. GF Soy Sauce
1 big tsp. Dijon Mustard
3 Tblsp. Olive Oil
4 Tblsp. Water
2 sprigs of fresh Thmye
2 1/2 inch piece of Rosemary, leaves removed from stem
Fresh cracked pepper
2 Bay Leaves
Mix the ingredients in a bowl, whisking well to combine, then add the shallot, and garlic cloves. Pour into a zip lock freezer bag, add the bay leaves and the pork roast. Seal up removing any air, and marinate 2-3 hours in the Refrigerator. Take out of the fridge 1/2 an hour before cooking time. If roasting in the oven, preheat to 350 degrees, roast about 1 1/2 hours.

Then, for dessert we had this yellow, almond strawberry shortcake recipe, well, kind of, sort of, will be a post pending) Over all it was a
delicious, lovely meal. It was delightful to see happy smiling faces at the dinner table.
