SHRIMP AND ASPARAGUS SALAD

SHRIMP AND ASPARAGUS SALAD

This was delicious!  There were no measurements – just eyeball the amounts.
3 lettuce leaves (I used romaine but any kind would work)
1 green onion, diced
juice of ¼ lemon
mayonnaise
dill, pepper
shrimp (cooked)
4-5 asparagus (lightly steamed until el-dente)

Rinse the lettuce leaves and pat dry, laying on a plate.  Rinse and pat dry the shrimp about ¾ cup.  Mix in a generous amount of mayonnaise, lemon and seasonings, and diced green onion.

Cook the asparagus in boiling water, until just el dente.  Rinse in cold water, and cut into 1 inch pieces.
Place mixed shrimp onto the lettuce leaves, add the cut asparagus, garnish with more lemon and green onion.
